200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, to serve 10)

200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
For the Citrus Syrup: Place all the items into a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the burner allowing it to reach room temperature entirely. Decant to a sterilised bottle, cap it and store in the fridge, where it will keep for around a month.
To make Cocktail Base: Combine every spirits and syrup in a sizeable container, leave to sit for an hour, then pass it through , ideally through cheesecloth, so it's completely strained.
To serve: Measure 85ml of the batch mix to a cocktail shaker containing ice, and stir gently for one minute until cold. Strain into a frosted cocktail glass or a similar vessel, garnish with a few cranberries and finish using a light spray with the mandarin essence over the drink.
